Carrot and Raisin Chutney

2 cups carrot, peeled, cubed   

1 onion, chopped roughly

¼ cup brown sugar  

¼ cup white/brown vinegar

1 tsp grated fresh ginger  

1 tsp ground cumin

½ tsp cinnamon  

Salt, Pepper

1 medium onion, diced  

1 cup pitted raisins

1 Granny Smith apple, diced

 

Steam the carrots and apple cubes till tender, either on stove or in microwave.   Drain the carrot and apple cubes. 

In small pot on the stove, combine onion, sugar, vinegar, ginger, raisins, cumin, cinnamon, salt & pepper. Stir in carrot & apple cubes; bring to boil. Reduce heat and simmer, covered, for about 20 minutes.  Spoon out ¼ of mixture, blend it coarsely, mix in with rest of mixture in pot.  Simmer till it resembles chutney-consistency.  Keep in fridge.

Cinnamon Bread Roll Ups

sliced bread (white or brown)

cream cheese / smooth cottage cheese

+ 3/4 cup icing sugar

1 cup white/brown granulated sugar

1- ½ tsp ground cinnamon

3/4 cup butter/margarine, melted

 

Cut off the crusts, flatten each slice with a rolling pin (or a wine bottle).  Mix the cream cheese / cottage cheese with little bit of icing sugar at a time, till it’s to your taste.

Spread the mixture on each slice bread.  Carefully roll up each slice. Mix the white/brown sugar with cinnamon.  Brush each rolled-up slice with the melted butter/margarine and gently roll into the sugar-cinnamon mixture.

Preheat oven to 180 oC.  Carefully place the rolls on an ungreased baking sheet and bake for 20 minutes, or till golden brown.

As it cools down, the outside of each roll hardens.

This is seriously fabulous!!!!  A quick snack for unexpected guests.

Cacao (chocolate) Orange Risotto Dessert in Oven

3 cups boiling water

1 c white rice (ordinary rice)

2 tsp ground cinnamon

2 cups coconut milk 

1 c brown sugar (or less)(or substitute)

½ cup cocoa powder

1 tsp vanilla / caramel essence

Zest of 1 orange

Juice of 1 orange

Tin of mandarin oranges – to serve

Preheat oven to 200 oC.  Place boiling water, rice, cinnamon, coconut milk, sugar, cocoa powder, vanilla, orange zest and orange juice in a 1.5L casserole oven dish with a lid and stir to combine.      

Cover the dish with a lid and bake for 40 minutes.   Remove dish from the oven, stir, cover again and bake for another 40 minutes – test to see if rice is soft but not mushy.     Remove and let cool down.  Serve with mandarin oranges / fresh orange slices.  Alma Pretorius

'Melkkos' (Milk noodles) in microwave

 

1 x 68 g packet instant noodles, broken up – discard the seasoning sachet

1 cup milk

1 tablespoon butter

1 teaspoon cinnamon powder

¼ (?) cup sugar

In a microwaveable glass dish with a lid, add the raw noodles, milk and sugar – put lid on, microwave on HIGH for 15 minutes, till milk has evaporated and noodles are soft.  Remove from microwave, stir in the butter, sprinkle with cinnamon and enjoy.

RAISIN and CINNAMON-SUGAR MUFFINS

MAKES 6 BIG MUFFINS

 

1/2 cup SASKO bran self-rising flour

1/2 cup SASKO self-rising flour

1/2 cup double cream yoghurt

1/4 cup vegetable oil

2 tablespoons sugar

1 large egg

1 teaspoon cinnamon powder

2 teaspoons caramel essence

1 cup mixed raisins

Extra cinnamon sugar for topping

 

Preheat oven to 200 oC.  Prepare muffin pan.  Mix the self-rising flours with the raisins, sugar and cinnamon.  Add the yoghurt, oil, egg and essence.  Mix, spoon into muffin pan and top with thick layer of cinnamon sugar.  Bake for 20 minutes.

Giant Cinnamon Roll

Giant cinnamon roll

 This morning on Instagram, I saw this photo (@bakedbyrachel) - my immediate thought (okay, so maybe I wasn't fully awake yet) was:  a giant cinnamon roll topped with 'boerewors' (cooked sausage) and glazed ..... the recipe?  Just a scrumptious giant cinnamon roll!

Now I'm thinking - it can be the next trend:  bake giant cinnamon roll, let it cool, top it with a cooked (boerewors) sausage and glaze it ... yum.

APPLE PIE IN A MUG - SINGLE SERVING

Single serving

 

1 green apple, cored, peeled, cut into chunks

Chopped nuts / seeds

1 tbsp toasted bread crumbs / coarsely chopped cookie crumbs

1 tsp powdered sugar (icing sugar)

½ tsp cinnamon/apple spices

½ tsp lemon juice

In a cup, mix the apple chunks with the cinnamon/apple spices and lemon juice. Microwave on High for about 2 minutes. In a small mixing bowl, mix the nuts with the powdered sugar, toasted bread crumbs / cookie crumbs, sprinkle on top of apple mixture and enjoy with ice cream / yoghurt / cream / custard.

Cinnamon and Habanero sauce cookies

Makes about 24, depending on size

 

6 tablespoons vegetable oil

1 tablespoon Habanero sauce

1 large egg

1 cup self raising flour

3/4 cup brown sugar

1 teaspoon vanilla essence

1 teaspoon cinnamon powder

 

Preheat oven to 170 oC.  Spray baking sheet.  Mix together, form walnut-size balls, put on baking sheet (not too close, they do spread).  Bake for 10 minutes (for softer cookies) or 12 minutes (for crisper cookies).  Let cool.
