2020 - June 29 - Red curry paste, peanut butter and cheese muffins

How do I decide on my flavors?  I think of a savory cupcake ...then I think what's in my fridge ...

So I had a bit of Red Curry paste in the fridge, supposedly to mix with peanut butter in a curry dish.

Red curry paste and cheese muffins
Red curry paste cheese muffins
Makes 6 big muffins

1 cup self-raising flour
1/4 cup red curry paste
Pinch of Salt
1 heaped tablespoon crunchy /smooth peanut butter
1 cup grated cheese (I used Cheddar)
1/4 cup sunflower oil
1 x-large egg
1/2 cup milk

Preheat oven to 190 oC.  Prepare muffin pan.  Beat the curry paste, peanut butter, oil, egg and milk together.  Add the cheese, salt and flour.  Spoon into muffin pan.  Bake for 20 minutes.

These muffins were delicious!!! Almost like a chili bite.  It had a nice crispy outside and the heat of the curry paste wasn't overwhelming.

2020 - June 25 - Pepper sauce muffins with cheese

Today my hubby said he can't wait to have a Spur pepper burger again ....  so I thought ... let's try this in muffin form.

Pepper sauce and cheese muffins
Pepper sauce cheese muffins a la Alma
Makes 6

1 cup self-raising flour
½ cup milk
½ cup prepared black & white pepper sauce
¼ cup sunflower oil
Salt
6 cubes cheese
¼ cup cheese, grated

Preheat oven to 200 oC.  Prepare 6 muffin pan.  Mix the pepper sauce, milk and oil.  Add the salt and self-raising flour.  Spoon into muffin pan.  Press 1 cube cheese into each mixture … sprinkle with grated cheese.  Bake for 20 minutes.  Remove from oven, let cool in pan for 5 minutes.

2020 - June 18 - Chakalaka muffins; knitted beanies

Last week I finished my beanie project for Monique ... I completed 80 beanies.  They were all knitted in wacky colors, but will keep little heads warm.

Using a tin of Chakalaka ... muffins!
Chakalaka muffins
Makes 12

410g tin chakalaka (mild / hot), drained, throw liquid away
1 cup self-rising flour
1 large egg, beaten
½ cup milk
2 tsp mustard powder
Salt, pepper
Grated cheese

Preheat oven to 200 oC.  Prepare muffin pan.  Mix the chakalaka with egg, milk, salt, pepper and mustard powder.  Stir in self-rising flour.  Spoon into muffin pan.  Sprinkle little bit grated cheese on top.  Bake for 20 min.  Let cool in pan for 5 minutes.

These muffins will be perfect as a side dish to a braai.
