2020 - June 9 - Cheese & onion muffins; Date cinnamon & ginger muffins

When I think of breakfast, I just love the idea of making muffins.  So I thought about cheese and onion muffins.  They were absolutely delicious!!!!!
Cheese and onion muffins
Makes 12

1 cup cheddar cheese, grated
1 cup self-rising flour
1 cup onion, finely chopped
1 teaspoon salt & vinegar popcorn seasoning
½ cup milk
¼ cup sunflower oil
Coarsely ground pepper
1 teaspoon paprika powder

Preheat oven to 190 oC.  Grease 12 muffin pan. (I put squares of foil in each hole and spray it – keep muffin pan ‘clean’.)  Mix the cheese and onion with flour and spices.  Add the milk and oil into the flour mixture and stir with fork.  It will be a stiff mixture.  Spoon into the 12 holes and bake for 20 minutes.  Let cool in pan for about 5 minutes, carefully remove the foil and let it cool down for 5 more minutes on wire rack.  Enjoy.

Wanting to have a naturally sweet muffin, I looked at one of my previous date muffins ... but thought I'll simplify the recipe.  Oh my goodness, they were fluffy and naturally sweet and delish!!


Date ginger cinnamon muffins
Makes 6

1/2 cup self rising flour
110 g dates, cut into small pieces
¼ cup boiling water
1/2 teaspoon salt
1 large egg, beaten
1/4 cup milk
1/8 cup vegetable oil
1 teaspoon ginger powder
1 teaspoon cinnamon powder

Preheat oven to 190 oC.

In food processor, blend the dates with boiling water till a puree.  In bowl, beat together the egg, milk, date puree and oil.  Add the self rising flour, ginger and cinnamon powder and salt.  Spoon into 6 muffin pan.  Bake for 20 minutes.
