2020 - April 10 - Doritos nachos with stew

Today I am thankful for Doritos crisps ... Nachos!

I defrosted 2 cups of savory couscous, 2 cups of beef stew ...after heating it, I layered Doritos on a baking sheet - spooned the couscous & stew on top, sprinkled Cheddar & Mozzarella cheese on top and baked it at 200 oC for about 15 minutes. Delicious!

2020 - March 12 - pickled curried fish spices with couscous

Today I am thankful for spices  

last night I fried in some oil these 'pickled curried fish' spices. 

I add left-over couscous, baby spinach leaves, halved cherry tomatoes and a tin (drained) tuna - OMW!!! Absolutely scrumptious.
