2 cups of all purpose (cake) flour
1/4 tsp salt
1/4 cup of oil
3/4 cup of boiling water
Mix
all ingredients to form a soft dough. Divide into 8 pieces. Roll
each into a ball. Place balls of dough in a bowl, cover and rest for 15
minutes. On a floured surface roll each ball into a large circle.
Cook tortilla in a hot pan (no oil, butter, spray) for about 30 seconds
on each side – you’ll see bubbles forming on the top and it will brown
on the bottom. Store in a covered container to stay soft while you’re
‘cooking’ it.
