Cabbage, Bacon and Cheese Crustless Quiche

2 cups green cabbage, sliced thinly (or red cabbage)

½ –1 cup bacon, cubed - fried in pan

1 cup grated Cheddar cheese

3 large / extra-large eggs

½ cup milk

Salt, pepper to taste

Preheat oven to 180 oC.  Steam the cabbage on stove for 5 minutes.  Mix steamed cabbage, fried bacon and cheese together.  Season.  Beat the eggs and milk together in a small bowl with a fork and mix with the cabbage mixture.  Pour into an oven dish and bake for 25 – 30 minutes or till centre is set.

Butternut (pumpkin) fritter muffins

Serves 6 or 12 fritter muffins, depending on size

250 g pumpkin/butternut, steamed

2 x-large eggs

1/2 cup milk

Salt

2 tablespoons ground cinnamon

1/2 cup white sugar

 

Mix the cinnamon & sugar.

Preheat oven to 200 oC. Beat eggs with milk.

Spray a big 6 muffin pan or small 12 muffin pan.  Puree the butternut, add the egg mixture, season with salt and pour into the muffin pan.  It will be smooth.  

 

Sprinkle a thick layer of cinnamon sugar on top.  Bake for 30 minutes. 

Serve with honey, syrup or ginger syrup.

Serve with ice cream as dessert.

Cinnamon Bread Roll Ups

sliced bread (white or brown)

cream cheese / smooth cottage cheese

+ 3/4 cup icing sugar

1 cup white/brown granulated sugar

1- ½ tsp ground cinnamon

3/4 cup butter/margarine, melted

 

Cut off the crusts, flatten each slice with a rolling pin (or a wine bottle).  Mix the cream cheese / cottage cheese with little bit of icing sugar at a time, till it’s to your taste.

Spread the mixture on each slice bread.  Carefully roll up each slice. Mix the white/brown sugar with cinnamon.  Brush each rolled-up slice with the melted butter/margarine and gently roll into the sugar-cinnamon mixture.

Preheat oven to 180 oC.  Carefully place the rolls on an ungreased baking sheet and bake for 20 minutes, or till golden brown.

As it cools down, the outside of each roll hardens.

This is seriously fabulous!!!!  A quick snack for unexpected guests.

Puff Pastry Pizza Scrolls

Defrosted puff pastry dough

½ tsp garlic salt

1 tsp dried basil

1 cup grated Mozzarella cheese

¼ cup grated Parmesan cheese / Cheddar

½ cup topping of your choice

1 cup Pizza Sauce / Tomato-based sauce

 

Preheat oven to 220 oC. 

Roll out dough, brush with sauce, add toppings and cheese, carefully roll up, slice, place in oven pan / dish and bake for about 12 - 15 min, or till they are golden and

crispy.

Serve with a lovely fresh green salad.

Caramel Condensed Milk Coconut Balls

2 x 200g packets Cream Crackers

2 x 360g tins Caramel condensed milk

Desiccated coconut

Chop the crackers very finely in a food processor.  Add the caramel condensed milk and process till they are nicely mixed.  Form small balls and roll into the coconut.

Versions:

Ginger - use ginger biscuits instead of cream crackers

Lemon - use lemon biscuits instead of cream crackers

Coconut - use coconut biscuits instead of cream crackers

No Bake Carrot and Coconut Cookies

2 cups grated carrots

3 ½ cups white sugar

2 tsp ground ginger (even topped)

1 cup water

1 ½ cup fine coconut

2 tbsp butter

 

Boil carrots, sugar, water & butter for 20 minutes.  Stir continuously.  Remove from stove.  Stir in the ginger & coconut.  Stir continuously till nearly cold.  Pour in greased plate and cut into squares when cold. (Or small muffin pans)
