Raw Radish Mayonnaise Salad

About 2 cups raw radishes, rinsed,   topped & tailed, sliced in half

1 raw onion, chopped fine (optional)

1-2 tablespoons fresh parsley leaves,   chopped fine

2 hard-boiled eggs, chopped fine

Salt and pepper to taste

Mayonnaise

Chilli flakes (optional)

 

Dry the rinsed radishes.  Mix the halved radishes, onion, parsley and mayonnaise.  Season to taste. 

Add the eggs.  Refrigerate.

Banana salad with coconut and curry powder

4 – 5 bananas

1 teaspoon (or more) curry powder

1 tablespoon white sugar

1 cup mayonnaise

1/2 cup desiccated coconut

Lemon juice (or Sprite / Sprite Zero / Lemonade)

Pinch of salt 

Peel and slice bananas – squeeze lemon juice over to prevent discoloring.  Mix the mayo with curry powder, salt, coconut and white sugar – taste and adjust if needed.  Pour over sliced bananas and mix carefully.  Refrigerate for few hours for best flavor.

Cucumber Salad Mousse

1 English cucumber, grated

½ onion, grated

125g (half) carton smooth cottage cheese with chives

½ cup mayonnaise

1 packet green jelly

Make the jelly with boiling water.  Let it set halfway.  Mix rest of ingredients and mix with half set jelly and let it set completely.

Cauliflower Mayo Salad

1 head of cauliflower

3 hard-boiled eggs

Raw Onion, chopped finely

Curled parsley, fresh,

1 tsp. dried dill

Salt and pepper to taste

1 cup mayo

1 tbsp sugar

 

Roughly chop cauliflower into bite-sized pieces, then place in a pot of boiling water. You need enough water to cover the cauliflower. Cook until the cauliflower is fork-tender (or steam it for about 11 minutes on High in microwave)

Rinse cauliflower in cold water, drain well and then refrigerate for a few hours.

In the meantime, boil 3 eggs.   Remove the eggs and allow those to chill for a few hours as well.   Once the cauliflower and eggs are chilled, you can further chop the cauliflower and dice the eggs. If you're using pickles, dice those as well.  In a large bowl, combine all of the ingredients until everything is covered. Refrigerate for another hour before eating.
