2020 - July 26 - Orange Yoghurt Muffins

We are still under lockdown ... and I'm still baking muffins.  I've made some apple yoghurt muffins last week with Granny Smith apples.  Divine!!!

Today I wanted to do something with oranges ... I tried muffins using weetbix and orange juice & zest, but it was dry and not that good.

So I thought ... what if I take the apple muffin recipe, but use lemon cubes inside ...

Orange coconut yoghurt muffins

Makes 12 big muffins

  • 1 cup all-purpose flour
  • 1/4 cup white sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup coconut yoghurt (I’ve used Lancewood CoconutYogurt)(any yogurt will do - think Pick 'n Pay lemon meringue yoghurt will be fabulous)
  • 1 large egg
  • ¼ cup oil
  • 2 oranges, zested, peeled and chopped small cubes

TOPPING:

  • 2 tablespoons all-purpose flour
  • 2 tablespoons white sugar
  • 1 tablespoon cold butter

Preheat oven to 190 oC.  Prepare 12 muffin pan.  Rub the zest of the 2 oranges into the ¼ cup sugar for the muffin mixture.  In a large bowl, combine the flour, orange-sugar, baking powder and salt. Combine the coconut yoghurt, egg, oil and orange cubes; stir into dry ingredients just until moistened. (batter will be thick). Fill greased or paper-lined muffin cups two-thirds full.

For topping, in a small bowl, combine the flour and sugar; cut in butter until crumbly. Sprinkle over batter.

Bake at 190°C for 20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
