11 vegetable salad - raw

 

Lovely RAW RAW vegetable salad .... 11 vegetables!!! 
 
raw carrot, grated
raw sweet potato, grated
raw broccoli, cut
raw brussels sprouts, sliced thinly
raw green beans, chopped
raw spinach, chopped
raw green bell pepper, chopped
raw snap peas, sliced
raw cabbage, sliced thinly
raw cauliflower, chopped
mushrooms 
 
Dressing: start with 
 
1 tablespoon white sugar
1 tablespoon white vinegar or lemon juice
1 tablespoon oil
 
Mix it in a small bowl and microwave for a few seconds till the sugar has melted. Season your salad with salt & pepper and pour over the dressing. If you find the salad is too dry, just mix more of the 3 dressing ingredients.
 
Spoon into closed container and refrigerate. Best to do this few hours in advance - let the vegetables 'marry'.   Such a fabulous salad.

NUTTY WHEAT, CRANBERRY, CARROT and ORANGE MARMALADE MUFFINS

Makes 6 big muffins

 

1 cup Nutty Wheat self-rising flour

1 large egg

1 cup grated carrot, firmly packed in cup

1/4 cup white sugar

1/2 cup milk

1/4 cup vegetable oil

2 teaspoons lemon essence

1 tablespoon orange marmalade (optional)

70 g soft dried cranberries

 

Preheat oven to 200 oC.  Mix all together, spoon into muffin pan.  Bake for 20 minutes (or till test skewer comes out clean.)  Leave for 5 minutes in pan.

NUTTY WHEAT, CRANBERRY, CARROT and ORANGE MARMALADE MUFFINS

Carrot and Kumquat whoopie pies

Makes 18 halves, 9 pies

 

1 cup self raising flour

1 large egg

1 cup fresh Kumquats, chopped

1 cup carrots, grated

1 teaspoon lemon essence

1/2 cup milk

1/4 cup oil

1 teaspoon mixed spices (cinnamon)

 

Preheat oven to 180 oC.  Spray a 12 and 6 muffin pan.  Mix all the ingredients together and spoon ONLY A HEAPED TABLESPOON into each muffin hole.  Bake for 11 minutes.  Let cool in pan.  Remove and let it cool down completely.  Using thick, stiff frosting sandwich them together.
