Chakalaka Bread

Makes 1 loaf

500 ml cake flour

10 ml baking powder

4 eggs (I use x-large)

410 g tin Chakalaka

125 ml cheddar cheese, grated

Salt, pepper to taste

 

Preheat the oven to 180oC. 

Sift together the cake flour, baking powder, salt & pepper.  Beat the egg & Chakalaka together.  Mix the egg mixture with the dry ingredients (I used my food processor).  Place dough in a greased bread loaf pan, sprinkle cheese on top and bake for 45 minutes or till done.

Delicious with a braai or any other dish.

Ginger Bread Loaf

250 ml brown sugar

15 ml Ginger

5 ml Mixed spice

Pinch of salt

5 ml Baking powder

250 ml oil

250 ml syrup (I realised I didn’t have enough syrup, so used ½ cup syrup, ½ cup prickly pear syrup)

250 ml lukewarm water with 5 ml bicarbonate

3 large eggs beaten with 125 ml water


Preheat oven to 180 oC.  Add all ingredients above in order and mix for 5 min. I used my food processor with the plastic blade.  Grease loaf pans well and dust bottom and sides of pan with flour. My bottoms got stuck, so maybe baking paper at bottom should do the trick.   Pour mix into pans and bake for about 50 minutes. Allow to cool. Cut and serve.

Banana, Bacon & Cheese bread

2 large, really ripe bananas

½ cup (100g) castor sugar

1 cup (260g) whole-egg mayonnaise

2 cups (350g) self-raising flour

Pinch of salt

125 g bacon pieces, cut small, cooked

½ cup Cheddar cheese, grated

Preheat oven to 180oC.  Grease a loaf tin.  In medium bowl, mash bananas.  Stir in the sugar.  Add the mayonnaise, flour and pinch of salt and lightly mix until just combined.  Pour the batter into the tin and bake for about 50 minutes, or until skewer comes out clean.  Let cool in the pan for 10 minutes, then turn onto a wire rack.

Amish-style coffee soup

4 cups hot coffee
4 slices bread — toasted
sugar
cream

Brew the coffee according to your taste.     Break each slice of bread into 1-inch pieces and place in four serving bowls.    Fill each bowl with steaming coffee.    Add sugar and cream to your taste and stir. Serve hot.
