GOAT CHEESE AND APRICOT COOKIES


Makes 24, depending on size

6 tablespoons vegetable oil
1 large egg
1 cup self-rising flour
1/4 cup white sugar
100 g soft-dried Turkish apricots, cut smaller
63 g goat cheese, ‘squished’ with a fork
1 tablespoon apricot jam
1 teaspoon vanilla essence

Preheat oven to 170 oC. Mix everything well together (makes sure goat cheese isn’t big chunks), form walnut-size balls and place on greased baking sheet (not too close to each other). Bake for 10 minutes.
