2 large, really ripe bananas
½ cup (100g) castor sugar
1 cup (260g) whole-egg mayonnaise
2 cups (350g) self-raising flour
Pinch of salt
125 g bacon pieces, cut small, cooked
½ cup Cheddar cheese, grated
Preheat oven to 180oC. Grease a loaf tin. In medium bowl, mash bananas. Stir in the sugar. Add the mayonnaise, flour and pinch of salt and lightly mix until just combined. Pour the batter into the tin and bake for about 50 minutes, or until skewer comes out clean. Let cool in the pan for 10 minutes, then turn onto a wire rack.
