Tuna and Instant Noodle Muffins

 

Makes 6 big muffins

 

1 x packet 2-minute noodles, cooked and drained*

1 x  g tin tuna, drained

1 teaspoon prepared mustard

1/4 cup ketchup / chutney

3 large eggs

1/2 cup milk

Salt, pepper

Grated cheese for top

Preheat oven to 200 oC.  Prepare 6 muffin pan.  Beat the eggs, milk, salt, pepper, mustard together.  Add the drained noodles as well as the seasoning packet from the noodles and the tuna.  Stir.  Spoon into muffin pan, top with grated cheese.  Bake for 25 – 30 minutes, or till test skewer comes out clean.  Let cool in pan for 5 minutes.
