Makes 6 big muffins
1 cup self raising flour
2/3 cup Branston pickle
1/2 cup milk
1/4 cup vegetable oil
6 cubes Cheddar cheese
Grated cheese for topping
Preheat oven to 200 oC. Prepare 6 muffin pan. Mix the Branston pickle, milk and oil. Stir in the self raising flour. Spoon into muffin pan – press a cube cheese into each mixture – sprinkle with grated cheese. Bake 20 minutes. Let cool in pan for 5 minutes.
