Makes 6 big muffins
1 cup self raising flour
1 cup Mature cheddar, grated
6 (or less) preserved green figs, chopped roughly
1/2 cup milk
1/4 cup vegetable oil
Extra grated cheese for topping
Preheat oven to 200 oC. Mix the flour with 1 cup cheese, milk and oil. Spoon into muffin pan. Press the chopped figs into each muffin mixture – sprinkle with extra cheese. Bake for 20 minutes (or till test skewer comes out clean.)
