Citrus peel muffins with Ginger cookie and Chocolate covered ginger chunks

Makes 6 big muffins

 

1 cup self raising flour

1 large egg

2 teaspoons lemon essence

1/2 cup preserved citrus peel, chopped

1/2 cup milk

1/4 cup oil

6 hard ginger cookies

6 x choc covered ginger chunks (Padkos range)

 

Preheat oven to 200 oC.  Prepare 6 muffin pan.  Mix together the flour and citrus peel so that they don’t clump together.  Add the egg, essence, milk and oil.  In muffin pan, place on bottom 1 ginger cookie, then citrus peel mixture.  Press a choc covered ginger chunk into each mixture.  Bake for 20 minutes.  Let cool in pan for 5 minutes.
