Salted popcorn cookies

Makes about 24, depending on size

 

7 tablespoons vegetable oil

1 large egg

1/2 cup self raising flour

1 cup popped salted popcorn, crushed very fine

Bit less than 1/2 cup white sugar

Extra crushed popcorn

 

Preheat oven to 180 oC.  Spray baking sheet.  Mix the oil, egg, flour, sugar and cup crushed popcorn together.  Form walnut-size balls, roll in extra crushed popcorn and place on sheet (not too close, they do spread). Bake for 12 minutes.  Let cool for 5 minutes.
