2018 - February - Peanut butter date fudge

Wanting to make healthier snacks?  The Peanut butter, date and coconut oil fudge was a recipe in the latest Pick ‘n Pay magazine (Fresh Living) and they are really fantastic!  Only problem is … you have to keep them in the FREEZER, eat them straight from the FREEZER … so you cant take them to a party.

Peanut butter, date and coconut oil fudge
400 g pitted dates
130 g peanut butter
60 ml coconut oil

Cook pitted dates in little hot water for 5 min or till soft & sticky.  Drain them from water.  Blend dates, peanut butter and coconut oil together in processor to form a sticky paste.  Spread out to 2 cm thickness on lined baking tray.  Freeze to set for at least 3 hours.  Cut into small (they are quite rich) bars.  Transfer to container and serve from freezer.  (I thought one can also just roll it in small balls and roll it then in coconut or cacao powder.)

These snacks are soooo good!!!!!!
