2020 - March 27 - flavored cappuccino sachets - Cacao muffins

Got 53 sachets ... so a cuppa 2x a day should keep me sane for the next 20 1/2 days



Hein was in the mood for black forest muffins .. so I got this cacao (cocao?) muffin recipe. It's not too sweet. Icing? Nah - just spoon Purity Apple Blackcurrant Delight on top and it's almost black forest.

Cacao muffins
Makes 12 big muffins

2 cups all-purpose (cake) flour
¾ cup white sugar
½ cup cocoa powder, sifted
1 tablespoon (yes, not teaspoon) baking powder
½ teaspoon salt
2 large eggs, room temperature *(here’s how to get them from fridge to room temp)
1 ¼ cups milk (whole, low-fat, fat-free)
1/3 cup veg oil
2 teaspoons vanilla

Preheat oven to 200 oC. Use the middle rack in oven. Spray muffin pan (or use muffin liners).
In medium bowl, mix flour, sugar, cocoa powder, baking powder and salt.
In large bowl, whisk eggs till lightly beaten, whisk in milk, oil and vanilla till smooth. Stir wet ingredients into flour mixture until moistened. Will be a pouring consistency.
Fill the muffin holes to the top. Bake for 24 min (test if toothpick/knife comes out clean).
Set pan on wire rack to cool for about 10 minutes. Remove muffins and let cool completely.

*Put eggs in bowl, cover with hot tap water (not boiling water, it will cook the eggs) and wait for about 6 minutes.
