2020 - April 18 - 2 minute noodle pizza

After we've made 2 minute noodles a few times for lunch, I thought ... what else can one do with 2 minute noodle?  Turns out - quite a lot!!!!

Some people crush the raw 2 minute noodles, mix it in with melted chocolate and put the 'clusters' on a sheet to set.

One of the recipes grabbed my attention:  a 2 minute noodle pizza using the noodles as base. Although base not crisp enough to lift, it was really tasty.

2 minute noodle pepperoni pizza

2 packets Maggi instant noodles Boiling water herbs/seasoning, if you want 1 large egg, beaten ½ cup cheddar cheese, grated ½ cup mozzarella cheese, grated (or mixture of cheddar & mozzarella cheese) Pizza sauce Pepperoni / chorizo slices & mushroom slices Onion slices
  We like our onion and mushrooms quite raw – so we only add it during the last 5 minutes of baking – but you can add yours with the meat.
Preheat oven to 200 oC. While oven preheats, pour boiling water over noodles in a heatproof sealable container (don’t use seasoning sachet), cover tightly and leave for 10 minutes. Drain. Season, add the egg and ½ cup cheddar cheese and mix well.
On a floured baking sheet, spread the noodle mix. Form it in circle or keep square. Press with spatula/egg lifter down to compress. Spread with pizza sauce, top with pepperoni/chorizo. Sprinkle cheese on top. Bake for 15 minutes. Add the mushroom and onion slices and bake for another 10 minutes. Let cool for 5 minutes. Cut into wedges.
