Today I am thankful for fat-free cranberry and apple yogurt ...
Uggh, it's really not a nice yogurt. So after my success with the rusks in the Biltongmaker, I wanted to make another batch with different flavors.
There were dates in the panty, had this yuck yogurt ... so got a date rusk recipe using buttermilk ... and instead just used this yogurt.
Since I wanted a smaller amount, I halved the recipe ingredients .... but forgot to half the margarine ... luckily I realized that and just added more flour.
Apple yogurt date rusks
340g selfrising flour
5 ml heaped baking powder
170 g margarine (35% fat – d’lite)
150g dates, chopped fine
125 ml cranberry apple yogurt
1 large eggs, beaten
5 ml oil
Preheat oven to 180 oC.
Sift the dry ingredients and rub in the marg.
Stir in the dates and add the yogurt and eggs. Knead until a stiff dough is formed in food processor with dough hook.
Pat down into greased baking sheet. Bake for 20 minutes. Dry out. Recipe: Alma Pretorius
With another bag of Granny Smith apples in our fridge, I searched for a recipe. Applesauce! Yes, what an easy recipe this is!!!!
Applesauce
- 4 cups granny smith apples, peeled, cored and chopped into small chunks
- 1/2 cup tap water
- 1/2 naartjie, peel, chopped fine
- ½ teaspoon cinnamon powder
- ½ teaspoon ginger powder
Instructions
- In a large saucepan, combine the apples, water, naartjie peel, cinnamon and ginger powder. Bring to a boil then cook for 10-15 minutes or until the apples are soft (Alma’s took 10 minutes otherwise it would have burnt on bottom).
- Blend till smooth. Refrigerate
- Taste then add some sugar (I use 1-2 teaspoons) and some cinnamon (I use a few shakes). Adjust as necessary. Serve warm or cold.
